Yoder Smokers has released an accessory to upgrade the El Dorado line of Santa Maria grills. The new Brasero Firebox Kit makes it easier to cook with hot embers.
Braseros are used in Argentinian and Santa Maria style cooking. The way they work is they sit on the side of your grill and are used for burning logs. As the logs burn and embers fall, you can move the hot embers underneath the cooking grates.
It gives you a steady stream of fresh lump charcoal to cook with. This allows for a more controlled cook and less flare-ups from an open flame. You can add more or less embers under the grates depending on the temperature you want to cook at.

To add more versatility to your cook the Brasero Firebox Kit also has some other features besides supplying embers. It comes with a grate for searing, with a drip tray, and some kabob skewers. This lets you slowly let your steak get to temp on your main cooking grate then hitting it with high heat of the Firebox Kit to easily finish it with a nice sear.
The brasero is heart of the action for fire, so it needs to be durable. Yoder’s is made from thick 7-gauge American steel to prevent warping through lots of heat cycles.
The retail price on the new accessory starts at $439 plus shipping. Yoder sells online exclusively at All Things Barbecue, or locally through a dealer network.
